The weather is finally starting to cool down, and it feels like fall is just around the corner (it technically already is, but now it actually feels like it). With only a week left until the change of season becomes completely official, I've gotta say that I'm super excited. Fall is without a doubt my favorite season, and fall in New York is just amazing. Gotta love the changing colors of all the leaves!
That's not to say that I don't love summer too, or any of the other seasons. Fall just happens to be the best one I think. However, with only a week of summer left, I figured it was necessary to make one last summer-related post, and a milkshake was definitely the way to go. Now that my schedule is a little busier since classes are picking up, milkshakes are the perfect way to enjoy something special without having to invest a lot of time into making it. Not to mention that I just love milkshakes in general, so really, I think any time is perfect for a milkshake!
This piña colada milkshake is the perfect way to finish off summer. It's refreshing and oh so simple to make, and tastes deeelicious, just like a real piña colada! It doesn't require many ingredients, making it something you can blend up at a moments notice. The rum can be left out, if you dont drink alcohol or are planning serving this to children. Without the rum, it's just a delicious and tropical pineapple-coconut milkshake. However you choose to make this milkshake, it's delicious! It's been a great summer, but now I'm ready for fall! Enjoy!
Piña Colada Milkshake
Ingredients
20 oz can pineapple chunks (in juice)
1/3 cup cream of coconut
2 oz dark rum
2 cups vanilla ice cream
toasted coconut and maraschino cherries, for topping
Directions
Drain the pineapple chunks from their juice and add to a blender. Discard the pineapple juice. Add the cream of coconut, rum, and vanilla ice cream, and blend until smooth. Pour the milkshake into glasses, and top with toasted coconut and maraschino cherries. Drink immediately, and enjoy!
Makes 2 milkshakes
