Hershey's just released a brand new line of chocolate spreads a few days ago, and I was one of the lucky bloggers (this was like the coolest thing ever) who was chosen to receive a Hershey's kit featuring all three delicious flavors and a flavor pairing kit. Getting a box full of classic chocolate spread, chocolate-almond spread, and chocolate-hazelnut spread in the mail along with a ton of delicious dipping options was very exciting, especially considering how much of a chocolate fiend I am.
All three flavors are delicious, but I'm thinking that the chocolate-almond might just be my favorite flavor at the moment. The chocolate-nut spreads are very chocolatey, and while the flavor of the nuts is certainly detectable, it's not quite as strong as in other chocolate-nut spreads. So, if you want a chocolate spread with a subtle hint of nutty flavor, then Hershey's spreads are the way to go. They taste great when paired with sweet and salty snacks, and are also delicious straight from the jar...
Since it's cookie week on the blog, I wanted to incorporate my samples of Hershey's chocolate spreads into a simple cookie recipe. I thought the classic lace cookie would be a great way to incorporate Hershey's spreads into my holiday baking, and I was certainly not disappointed. Lace cookies are super simple to prepare- all it takes is a few quick turns of a wooden spoon, and you're pretty much good to go. Drop the cookies by rounded teaspoonfuls and they'll spread into delicate little rounds as they bake, making them the perfect base to spread some rich chocolate Hershey's spread on top. Using the Hershey's spread is easier than having to spread melted chocolate on each cookie, and the spreads go on perfectly smooth. I chose to use the regular chocolate spread in these cookies, but I'm sure that the chocolate-almond and chocolate-hazelnut spreads would also work perfectly with the oatmeal lace cookie base.

Oatmeal Lace Cookies with Hershey's Chocolate Spread

Ingredients
1/2 cup (1 stick) unsalted butter, melted and slightly cooled
1/2 cup sugar
1/2 cup brown sugar
1 large egg, at room temperature
1/2 teaspoon vanilla extract
1 1/2 cups quick oats
1 tablespoon all purpose flour
1/4 teaspoon salt
1/4 cup Hershey's chocolate spread (any flavor)
Directions
Preheat the oven to 325 degrees F. Line baking sheets with parchment paper or silicone liners (I used Silpats).
In a large bowl, whisk together the granulated sugar, brown sugar, egg, and vanilla extract. Pour in the cooled, melted butter, and stir to combine. Mix in the oats, flour, and salt, and stir with a wooden spoon until well combined. Let the batter sit for 5 minutes.
Drop teaspoonfulls of dough onto the prepared baking sheets, spacing the balls of dough about 2-3 inches apart in order to give the cookies enough room to spread as they bake. Bake the cookies until they are crisp and golden brown, about 15 minutes. Allow the cookies to cool for a few minutes on the baking sheets before transferring them to a wire rack to cool completely.
Once cooled completely, spread a thin layer of Hershey's chocolate spread over the bottom end of a cookie. Top it off with another cookie, right side up. Repeat with the remaining cookies. Drizzle a little melted chocolate over the tops of the cookie to decorate if desired. Enjoy!

ReplyDeleteI came up with my own version of a Almond Lace Cookies, or as I sometimes call them, Broomstick cookies. While different from your own, I think mine is a unique take on the dish.
