The end of last week was brutal and unbearable. It was driving me crazy.
I’m referring to the absolutely ridiculous heat wave that struck New York on Thursday, Friday, and Saturday. Temperatures rose to well over 100°F, and the humidity in the air only made things feel even worse. I dread when the temperature goes past 85°F, so this was just madness. Friday was by far the worst day of the three; all the weather stations said the temperature reached 111°F, and for once, I believed the weatherman! It certainly felt that hot. The ten minutes that I spent outside on Friday afternoon to buy something for lunch were probably some of the worst ten minutes of my life.
Ok, I’m clearly exaggerating, I’m sure there have been worse moments in my life, but for argument’s sake…let’s just say those ten minutes were preetttyy bad. Not to mention all the time I spent waiting in subway stations for the trains to arrive…that was pretty bad too.
By the time I got home from my internship, I had made up my mind that there was absolutely no way I was going to bake a single thing during the entire weekend. I had no desire to turn on the oven, or do anything of the sort. I wanted something that could be prepared really fast, required no heat, and was refreshing.
Enter strawberry lassi. Lassi is an Indian yogurt-based fruit beverage, usually prepared with mango. I absolutely love lassi; I always find myself ordering it whenever I have Indian food (which is fairly often). I had no mangos in my kitchen Friday afternoon, and there was NO way I was braving the heat again to go buy some at the supermarket, so I settled for fresh strawberries, which I conveniently happened to have in my refrigerator. I’m glad I settled. Strawberry lassi may be a bit unconventional, but it’s delicious!
Strawberry Lassi
Adapted from Joylicious
Ingredients
· 1 pound fresh strawberries, trimmed and halved
· ½ cup honey
· pinch of salt
· 2 cups plain Greek yogurt
· 1 cup crushed ice
Directions
Combine the strawberries, honey, and salt in a blender. Purée until the strawberries are smooth.
Add the Greek yogurt, and blend until smooth. Repeat with the ice.

ReplyDeleteNormally I don't comment on posts, but you Eastern Coast people need to suck it up. You hit 100+ temperatures for a few days...who cares??!! Texas has had 100+ for over 20 days now and we certainly don't b**** about it, or at least not as much as y'all do. And our heat index frequently hits 110+. Geez, get a hold of yourselves! Having said that, I can't wait to try your recipe. It looks delicious!

The point of Nina's article (and submission of her recipe) is for EVERYONE to enjoy ! I must say, I do detect just a bit of angst towards New Yorkers...? Well, my sincere apologies you feel that way. DeleteThe East Coast's heat is way different than the heat of Texas. Texas heat is dry and the East Coast heat is humid. I live in SC and we have humid days even in the winter, if we even get a winter. Some days it is like walking out into an oven because the air feels so thick and you feel like you can't even breathe.
DeleteLindsay - That was an uncalled for comment. If you have ever been to New York in the summer with the humidity and you didn't complain, I would be shocked! I have lived all over the US and the humidity in these states adds horribly to this heat. I loved this recipe! It was delicious, thank you for sharing!
DeleteTexas heat is NOT DRY. At least not all across the huge state. East Texas is humid year round. I'm going to try this recipie for my birthday.
DeleteLindsay, you need to get over your self and not leave nasty comments on a recipe! seriously you have a ton of growing up to do apparently and FYI! i lived in Mesa AZ, where it gets hotter than your lame ol Texas. and I live on the east coast. its worse out here just so you know, its not the dry heat where it is hard to breathe, its the humid, sweat your behind off as soon as you walk out the door kind of heat where at times its hard to breath. so you better check yourself next time leaving a remark because by the response you have received, not a single person agrees with what you said. NOW NINA! i am going to try this, my hubby will enjoy this! :D

ReplyDeleteI am not exactly sure how much it made (as far as an exact measurement), but there was definitely enough lassi for 4-6 servings. Hope this helps!

Deleteindian restaurants make their lassi with one part yogurt to one part buttermilk-- have you tried that? i've tried lots of different lassi recipes and while they were all good, none of them tasted authentic. the buttermilk alters the flavor just right.

DeleteI have to comment again -- I've made this recipe several times now -- adding granola or fresh blueberries (or both!) and it has been delicious EVERY.SINGLE.TIME. Once I used frozen fruit and omitted the ice -- still yummy!

It may be grey here, but at least I don't feel like strangling strangers on the street. Or I WOULD if I could just get up the energy to move. ;-)) (I spent a few years in Hong Kong as well...the weather is similar, only we had thunder storms and a lot more rain. Hot, sticky, humid, rain. Yum.)

ReplyDeleteMy girls and I enjoyed this as part of our lunch today and they loved it. The only thing I had to change was the yogurt. My girls are dairy intolerant so I used 1 cup of almond milk in stead and just added a little extra ice. It went great with our cheese and crackers. Thanks

I tried it out this morning however I didn't have Greek yogurt or strawberries, so I substituted bananas and 2% milk and it turned out AMAZING! I couldn't get enough of it and drank the whole thing! Even my mother thought it tasted delicious and she hates smoothies! Thanks for the recipe!

DeleteI have a gastric band so make meals like this often with Greek yogurt or high protein mesl replacement powder. So refreshing with fresh or frozen fruit or some of each. I put almond meal in it too to add some MUFA .'s. Natural Peanut butter works too !
